Mexican Chicken Salad (2 persons)

One avocado, peeled and chopped
500 gram mixed lettuce
1 red bell pepper, chopped in cubes
1/2 union, chopped in small pieces
500 gram chicken breast, cut in small pieces
1/2 cucumber, chopped in cubes
250 gram cherry tomatoes, cut in halves
grated cheese (as much as you like, you can mix up the cheese if you like: gouda, chedder etc)
2 cloves garlic, minced
2 tsp. cumin
2 tsp. chili pepper
1/4 tsp. salt
2 Tbsp. olive oil
(add tortilla chips, sour cream, cilantro, salsa sauce and seasoned black beans to your liking)

Preparation:
Heat up olive oil in a large pan, add minced garlic, salt, chili pepper, cumin and the chicken pieces.
First bake the chicken slow keep stirring, then fire it up!

Put the mixed lettuce, cucumber, red bell pepper, cherry tomatoes and union in a salad bowl and mix it up.
After that put the mixed green salad on a plate, put the avocado pieces on there and pile the cheese on top.

If you prefer you can add some ranch dressing on top of the salad or salsa sauce.
Since it’s hard to find good ranch dressing here in Holland below a recipe for ranch dressing.

Ranch Dressing
1 cup mayonnaise (try not to use sweet mayonaisse but Hellman’s for instance)
1/2 cup sour cream
1/2 tsp. dried chives
1/2 tsp. dried parsley
1/2 tsp. dried dill weed
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/8 tsp. salt
1/8 tsp. ground black pepper

Preparation:
In a large bowl, whisk together the mayonnaise, sour cream, chives, parsley, dill, garlic powder, onion powder, salt and pepper. Cover and refrigerate for 30 minutes before serving.
